Meatloaf in a Dutch Oven... pics!

So this is my first try at using a camp dutch oven. I'm doing this for the May monthly project found here:

The May project is to cook outdoors using a method that is new to you in order to challenge yourself and learn new techniques. Maybe you have a new stove you haven't tested yet. This is your chance! :thumbsup:

For my meatloaf, I'm using a standard McCormick meatloaf seasoning pack and 2lbs. of ground beef.

I am using a #10 Lodge dutch oven, a liner, and a trivet for the inside to keep the meat up out of the drippings. Before starting, I wiped everything down with canola oil, inside and out. I fired up some kingsford regular charcoal in my chimney starter and am using 9 coals on the bottom (around the edges) and 16 coals on the top. The recipe calls for 375o so I hope this is close.

I made the loaf into a round shape, sort of like a gigantic hamburger patty so that it will cook more evenly.

Thanks! This is the next 1/3 turn, and I added some more coals to the chimney starter so they will be ready in time for the 3rd turn to replace the ones that have died down. This recipe calls for one hour of cook time at 375o but in my experience it takes considerably longer for the internal temperature to reach 165o. Si I'm going to cook this one until the second change of coals has died down. I don't mind my meatloaf a little dry so long as it is cooked through.

Second batch of coals is nice and hot!



I replenished some on the lid and added one more between each leg.

Almost done!


Hmm, what's it going to look like in there?


Nice! Got a nice brown crust on top (I added a few extra coals to get the top browned). The trivet kept most of the grease away from the meat. I cooked it perhaps a bit longer than was necessary, but it was surprisingly not too dry.

Got the trivet and liner out. Lots of stuff I didn't have to clean out of the DO itself.


Here it is after pulling out the liner. I like these so much I'm going to buy a whole roll of parchment paper and make my own.


The trivet seemed to have lost a bit of it's seasoning so I oiled it and am re-seasoning it in the toaster oven. It did sit in contact with the loaf the whole time so I kind of expected it. I would be re-seasoning the DO itself if it weren't for the liner. ;)

All in all I think it was a success. I can't wait to cook in this again!

It was easier than I expected it to be. If you're just doing a meatloaf in the oven, those are super easy.

I think I'm ready to try something more complicated. :D

I was just at a dutch oven cooking site earlier today and she made a bread pudding out of hotdog buns... with fudge sauce and marshmellows..  golly it looked good too.

Thanks! Yeah that bread pudding sounds really good. Lots of great sounding dessert recipes out there.

I think the liners are going to be just the ticket for acidic recipes that have tomatoes or citrus in them. I was hesitant to try some of the recipes with tomatoes because they attack the seasoning, but the liners might prevent that. Sure made cleanup a snap!

Nice!  Bacon-wrap that sucker next time!

I love my dutch ovens...I have three of them.  Done everything from bread to lasagna in them. 

Yup...gotta love parchment paper!  I use foil too.  Looks like I gotta get me a trivet...

Guess this one slipped by, but looks like it turned out great!

Is the trivet something by Lodge, or another source?  I've not seen one for dutch ovens, but looks like it would be really handy.  We made rolls on a raised plate, but it's a pain to get out once they're done-the trivet would work to raise it too.

Yep, the trivet is by Lodge. I got mine at Cabelas, but they are the same price at Amazon and elsewhere online. I want to say it was about $10 give or take.

I need to get out and do another DO recipe sometime soon. The cedar gnats are finally going away and outdoors is pleasant again.

I'm doing a pulled pork next weekend.  Got a dutch oven cookoff at church.  Going to smoke a butt in some hickory then finish it in the Lodge.
