 I was trying to stay out of this but it looks like I can't (as usual),  as much as I respect Nuk, his opinions and enjoy his postings I don't think he has the temperament for the position, it was he who suggested that we needed a new moderator to close a thread that really didn't need closing, it was going along fine, every one was civil, and the topic though perhaps a bit controversial was no means over the top in my opinion.

 Again, In my opinion, besides being laid back, fair, and even tempered a Moderator also needs to be flexible when it comes to interpreting the rules and closing down threads,  personally I have to agree with Mannlicher, I don't see the need for more moderation, we've been getting along just fine without more than we've had, if some event comes up that changes the way things have been going revisit the need for another mod then,  if it ain't broke, don't try to fix it.

The brisket turned out really good and moist. Most of it got eaten by 6 adults for dinner. I really like the baked bean recipe, I had two helpings, as did most everyone. Stacy made up a great batch of her homemade coleslaw to round out the meal.

The only change I made to the recipe is to use one pound of bacon for a double batch, as opposed to 6-8 slices, and smoked it for 3.5 hours at 250 degrees instead of cooking it in the oven or on the stove-top.





You've been holding out.  The baking (and every thing else) is fantastic, but some brisket and beans.............. ...

I think Nuke would be good as well as about ten others.

I agree with Orbean that Unknown would not be a good pick.

I also agree that a moderator who could just kill a thread if it got out of hand would be about all we need.  PW is smart and will pick a good one so I ain't worried about it.

Everything but the apple pie filling is standard for baked beans hereabouts. Interesting.
