Here is a recipe for the easiest cookies to make I have found.





These are made with just three ingredients:
 
One cup of Peanut Butter
One cup Sugar
One large egg

Mix the three ingredients in a mixing bowl with a large spoon or one of those plastic spatulas.  Nothing else, no oil or flour.  Preheat the oven to 325 Degrees.  Make balls of the "dough" about 1 1/4" in diameter and set on parchment paper on a cookie sheet.  Leave enough room between the cookies for them to double in size.  Bake 10 to 12 minutes (mine took a bit longer) and when they are starting to brown remove from the oven and place and leave them on the parchment paper but lift it off of the hot cookie sheet.  When hot these are really soft and pretty flimsy but when they cool off they get firmer.  Put them on a cooling rack when they are cool enough to pick up by hand.

Next batch I am going to try Splenda to see if it works okay.  These things could easily be addictive.  I did not smash them down and put fork marks in them as the recipe did not say to do that but I will see if that makes any change next batch I do.   :-*

I'm going to try this, but I'm going to substitute Swerve for the sugar....the rest of it is a Keto-safe mix.  We use Smucker's crunchy peanut butter which is made from nothing but peanuts & a little salt.  Very few carbs and a lot of protein is what I shoot for, so with the egg, which is nothing but protein, this recipe sounds Keto friendly and classified as HEALTH FOOD in my recipe book! :popcorn:

I like all your ingredients.   Cookies look really good.

I make this one, Coconut/Rum  Cookies,  a recipe I came up with by accident.
one 14 ounce  can Sweetened Condensed Milk
three 3.5 oz cans of Bakers Angle Flake Coconut
Tablespoon of Malibu Coconut Rum
pinch salt
1/2 tsp Vietnamese Cassia Cinnamon (other types will work as well)

preheat oven to 350F

mix all ingredients in a bowl, and using two spoons, drop roughly two Tablespoons per cookie on a well greased cookie sheet.  Should get about 24

Bake 12 minutes.  Cookies should be slightly browned on edges and tops

Remove pan from the oven, and let cool, on a wire rack before removing.

When reading this topic this afternoon, I got hungry.
So after some more googling peanutbutter cookies, i decided to go for this recipe:

The result is very! good. i just need to space them more out since they grew a lot during the 10 minutes in the oven.
It's hard to believe they where all round before they went into the oven :-)

You're welcome Dabberty.  It is interesting how they came out shaped like rectangles but is probably from butting up against each other.  The outside cookies look a bit rounder on the edges.

Your recipe has the flour and baking powder which is the way we usually make them but I wanted to try the cookies with no flour, no powder, and no oil just to see how they came out.  I like them but they are fragile and not set up like cookies with flour in them.  They are, however, both Keto friendly and very simple to mix and put in the oven.

I guess they where too close to the heating element from the oven and thats why they got so brown so quickly.
But if spam would taste like that, i'm game :-)

The first batch I made wouldn't bake,  so I left them in the oven until they got brown and stared to stiffen up (I'm not a cookie baker),  when I took them out they looked pretty good and had a good consistency,  but when they cooled they were hard enough to replace the flint in the jaws of my flint lock rifles. 
The next batch came out better,  I guess following directions really works.   :shrug:
