We usually grille the individual rounds but it was raining so we broiled it uncut.  It turned out very well.

Chicken Thighs cooked in the crock pot with chicken stock.  Served over mashed potatoes with green beans and tomatoes on the side.

Stan, its the powdered stuff in a shaker.  Not the liquid.    It sure wreaks havoc on my cast iron tho.. makes a crust that's hard to soak off.  ugh.

Last night we tried the Tamale Pie 2 recipe from Wolfy's huge Camp Cook link. It was really good, but a little on the sweet side because we only had sweet cornbread mix.

We added a little bit more garlic than the recipe called for, and a dash of cayenne pepper and a dash of cumin as well. I like this recipe and want to try it again.

That's good to know.  I've been eyeballing that recipe myself, but haven't tried it yet.....your pictures have kicked me over the edge! :drool:

I love the taste of cumin and garlic, too, so I usually add more than most of the recipes call for.   Lots of people add too danged many hot peppers for my taste, though........I like 'hot,' but not so hot that I can't taste any of the other ingredients, either. >:(

This had no hot peppers but you could probably substitute an Anaheim chili for the bell pepper and get great heat without going overboard.

You guys are cookin' up some mighty fine lookin' grub there! :drool:   We had blueberry/sourdough pancakes and hickory-smoked thick-slice bacon last night, but I didn't get any pictures......I needed an excuse to use the nice old 'vintage' cast iron 2-burner griddle that I got off eBay a year or so, ago.  I burned it off on the gas grill and re-seasoned it just yesterday afternoon.....worke d like a charm! :thumbsup:

Those blueberry / sourdough pancakes sound great. You'll have to school me on sourdough though. I've been wanting to get a starter going, but have never done it, so I need to do some research.

The 1/2 rack in the picture is in the fridge for tomorrow's lunch. The other half is definitely gone! :drool:

I learned through trial and error that I was caking on way too much rub. This time I sprinkled it on and rubbed it in, without leaving a ton of excess. They are the best ribs I have made so far. The weather was favorable too. Warm and sunny and not too breezy. It made for a good 5 hour smoke right in the zone.

I sprayed them with water at about the 4 hour mark, then mopped with some bottled BBQ sauce 1/2 hour before taking them in. They were nice and tender with good bark and a nice smoky flavor. Not so tender as to fall apart, but also not at all tough to chew. (Which I am told is just right.) Next time I smoke, I am going to skip the chicken altogether. It was good, but it takes up valuable space that could otherwise be used for ribs!

Tonight was spaghetti and sausage with tomatoes and cucumbers on the side.  For dessert my wife made zucchini brownies with chocolate frosting.  I would have taken a photo but ate it all before I thought about it.

I demolished some burgers on the grill tonight. Simple recipe. Get burgers ready, melt the cheese. Answer phone like a big dummy. Burn to taste.... I was pissed.
