I was gifted with these Kiya Japanese knives. A Takohiki style and a Shobu Yanagiba. Now I need some raw fish to slice!

Those are beauties Sam, congrats. The one we have is perfect for slicing thin bits of Tuna.

along with these hand made carbon steel, single bevel slicers, I got a very nice Japanese waterstone. I don't know what grit, since everything on the stone and in the packaging is in Kanji characters. lol
