Scents of Fall

Put up 10 pints of Apple Butter today. Not only great stuff, but the smell of fall was in the air in the kitchen and throughout the house all afternoon. Weather was in the low to mid 70's today, perfect. 65 now.

It took 32 apples, and we used five varieties, Gala, Fuji, Ambrosia, Honey Crisp and Red Apples. We used my sisters recipe which called for baking the apples for 3 hours after cooking on the stove top in 4 cups of water, and then blending with an immersion stick blender.

That sounds terrific.  The mix of apples you used is the same except for one of what a  fellow near us uses to make cider in the fall.  It just seems that the mix of varieties adds so much flavor to the cider compared to using just a couple of types of apples.

up on the farm in SW Virginia,  there was an orchard of Virginia Beauty apples.  Every summer we processed and canned hundreds of quarts of apple sauce and apple butter.  All the work was done in the county extension cannery in the little town of Rural Retreat.

In the interests of consistency- how many/what types of apples? A mash bill would answer other questions...

the apple products turned out well.  On Greg's Dutch Oven biscuits the apple butter was killer.  Dave's Apple Pie was up to standards.    :)

Thanks guy's. I've got 4 jars left for the home-front. And Dave's apple pie hooch was as good as always.
