I think I just hurt myself

Boiling water ...

2 cups grits
Tsp olive oil
Pinch of kosher salt
Pinch of black pepper
1 stick of butter
1 rasher of bacon, diced
1 cup shredded cheese
2 catfish fillets

Full, warm belly......night-night  O:-)

We just did that but had  eggs instead of your catfish filets...

I know the feeling we just got home from Fred's Southern Kitchen. That is the best buffet I have ever been to. Ribs, meatloaf, grits w/ tomato gravy, okra & tomatoes, mac & cheese, and so much more. For desert a piece of pecan pie with ice cream on top.

First grits I ever had in my life was when I worked in the convention-center kitchen about 40 years ago.  IBP was sponsoring free breakfasts for Southern buyers of their boxed-beef products at the convention center and it was IMPERATIVE that them boys had their breakfast GRITS!  :rolleyes:

I didn't really get it at first, :shrug: but really became a fan of them after a couple of weeks.  I'd make up a batch each morning for the crew and ended up eating more and more of them with my eggs and bacon until I actually started craving them! :drool:

..all we had was smoked gouda. Had to go naked on the grits with salt and pepper.  Nobody eats grits without real butter.
