Somehow I missed this when you posted it four days ago.  Thanks.  I have read a bit about these knives and the area in France where they are made.  This filled it in nicely.  I can now pronounce the name sort of correctly and understand the process of this particular factories method of making one of them. 

It is unfortunate that the name is used for many knives made by others and with much less expertise and poor materials.  When you buy a good one they will cost a lot.  There are too many being made that are nothing more than stamped blades cut from sheet and little or no handwork has gone into them.

It is sort of sad to me that most beautiful blade work is copied (cheaply) and sold to unsuspecting buyers that think they have really picked up a gem. Real knife making takes time and skill.
