I processed two nice Redfish yesterday with one of the filet knives I got from Dave.  Looks just like the one in the picture here.  Also did a Seatrout and a nice Black Drum.  I don't scale the fish, just filet them and then skin 'em.  After those 4 fish, the knife would easily shave your arm.
